Balsamic Ahi Tuna

This is a really good one! sorry It's taken me so long to get it to you...
I just squeeze fresh orange juice in the sauce, instead of marmalade...
It's sooooo good...
the asparagus is simple... mix a little grape seed oil, salt, and garlic up in there and pop in the over for about 15-20 mins...
easy rice in the rice cooker...
And you have an easy healthy and delicious meal with a little flare :)

Another one of those favored breakfasts...Peanut butter toast with fruit...This is kind of a family creation for me, my Cousin Cath taught me to have peanut butter toast with fruit on it, and I introduced that to my cousin Casey who tried the banana, strawberry, blueberry combination, It's soooo yummy...now we are all hooked :)
I made some more hummus really quick...(this seriously took 5 minuets or less)...I drained the can of garbanzo beans and put it in the magic bullet with a clove of garlic some lemon jucie I had pre squeezed and spoon full of tahini and a spoonfull of fage(that's my greek yogurt of choice)...blended that up and I had great hummus just like that!
then I put together this handy little wrap I learned about from auntie Pique...This is an ezekiel wrap from trader joe's, with hummus, hard boiled egg, lettuce and avocado...simple and yummy!
I also got dinner prepped...
My version of Spaghetti...
It's super healthy and super delicious!
yup...breakfast burrito again...what can I say it's sooo yummy!

A little salad with left over chicken and yam, raw almonds and cranberry mixture again and a banana...


Making Hummus

This one has become known as a McCrystal...another one of my favorite easy breakfasts...stick a piece of whole grain, high fiber bread in the toaster oven (you can do this in a regular oven too, just put bread in the toaster about 1/2 way first then put in oven to melt cheese and roast the tomato a little) add a piece of cheese and some tomato while you fry and egg or two and slice a little avocado on top.













My first attempt at homemade hummus!

Tuna and hummus wrap, with some of the pre cut veggies and a little extra hummus on the side and a raw almond and cranberry mixture...made a great set up for the day.

PREPPING DINNER... (Lemon Baked Cod, Brussel Sprouts, and Quinoa)
here I have a little butter and lemon mixture, and a mixture or whole wheat flour, touch of salt and some random herbs...cut the fish, dip it in the sauce, then in the flour mixture and put on a baking tray...
Throw some tomato and bell pepper on top for color and extra yumminess and put in the oven at 350 for about 25 minuets (here is the recipe this is based on)
You can roast the brussel sprouts at the same time (just put a little olive oil and a dash of salt on them mix it up really well and put in on rack under the fish, you may need to turn the oven up and cook a little longer after the fish is done)...while this is cooking follow simple instructions on a package of quinoa and your all set...
very healthy and very tastey...
make plenty so you can pack up the left overs to take for lunch or heat for a quick easy meal.

A Delicious Day

Still loving Breakfast Burritos lately...didn't have avocado this time but they still tasted great, and only take about ten, fifteen minuets tops, to throw together in the morning.
I made these salads really quick with the veggies and Chicken I prepped the other day, throw in some celery and peanut butter and a piece of fruit, and all set for the day...
I then pre cooked salmon for dinner...(I kind of followed this video for prepping)...it turned out pretty good, I did it with very little butter and some coconut oil instead and squeezed half a lemon on top as well, the herb is Thyme. (This wasn't the lowest calorie way to cook salmon but something I thought I'd give a try)...Stay tuned I will try it another way next time.
Put with some left over rice and some peas, and it's all set to heat for dinner...

BREAKFAST...(Spinach Scramble w/ goat cheese)

FOR THE DAY...
That's Lindsey's...Salmon and rice, Celery and peanut butter and an orange.

I had quite the food prep day and indulged in lots of veggies and juice...
Quick trip to golden farms to re-stock...

I still had some of those veggies left over from cooking with my aunt the other day so I gave them a whirl at home a little differently.

I started with coconut oil and garlic and ginger again, then the veggies, added some water squeezed half a lemon on top and a bit of balsamic vinegar...covered, let cook about 10 minuets added some sage(from a bottle), let cook another 10mins ish then turned off the heat and let it sit for a couple of hours we both loved this for dinner!
I also prepped a lettuce mixture with cabbage and some sprouts for easy salads...
and got my stand by veggies ready...
Threw some chicken and yams in...
And made more juice...
Now I have a great selection of healthy options to choose from for the next couple of days :)
